Lentil soup

This is an easy and healthy recipe. This soup is packed with lots of vegetables. This delicious soup is tasty and no-oil plant-based diet.


Ingredients

– 1 cup lentils, soaked and drain – 1/2 cup sweet onion, chopped fine

– 2-3 cloves of garlic, smashed with cooking knife

– 1/2 cup mushrooms, I used schiitake but other mushrooms also work well

– 1/2 cup carrot, sliced to small pieces

– 2 cups of water

– 2-3 tbsp. soy sauce

– 1/2 tsp. turmeric

– a pinch of black pepper

– 1/2 tbsp. lime juice

Preparation

– In a medium size pot, add water and turn heat to high.

– When water comes to a boil, add garlic and onion. When both ingredients soften add lentils, carrots and mushrooms.

– Turn heat down to low, add soy sauce, turmeric and black pepper.

– Let it stream for a half an hour. When everything is cooked add the lime juice and remove from heat.

Serve

I like to have my lentil soup with dish of rice and pickled carrots and ginger.
