
In this delicious and healthy recipe, I stuffed mushrooms with veggies and seasoned with soy sauce, black pepper and lime juice.
-Ingredients-
– 5-6 mushrooms – I used crimini, medium size
– 2 tbsp sweet pepper, minced
– 2 tbsp sweet onion, minced
– 1/2 tbsp ginger root, minced
– 1 clove garlic, minced
– 2 stems garlic chives, chopped fine
– Optional: 1/2 tbsp cooked rice
– 1 tbsp soy sauce
– 1/2 tbsp lemon or lime juice
– a pinch of ground black pepper

-Preparation-
-Pull the stem off each mushroom and trim the top (by cutting off the bottom edge),so you make a bowl in each mushroom. Set aside.
-In a mixing bowl, combine sweet pepper, sweet onion, ginger, garlic and garlic chives, rice, soy sauce, lemon or lime juice, and black pepper.
-Mix well and let sit 5 minutes.
-Turn oven to 360.
-Using your hand or a teaspoon, stuff each mushroom. Do not overfill.
-Add oil to baking pan and lay mushrooms in pan. Bake for 20 minutes.

Serve with rice or noodles. Use sweet and sour or chili sauce as desired.
