
A nice dish of noodles with gravy. Rad Na is a popular dish at markets and street vendors in Thailand.
To begin, set a covered pot of Easy Vegetable Stock, about 2 cups, on med heat. Set another covered pot of fresh water, about 2 cups, on med heat.
-Ingredients-
– 5 cloves garlic, crushed
– 1/2 cup sweet onion, julienne
– 1/2 cup carrot, cut at an angle into coins
– 1/2 cup sweet pepper, cut into small chunks
– 1 cup savoy, or other, cabbage, torn into pieces
– 1 cup crimini, or other, mushrooms, sliced
– 1 cup kale, torn into pieces
– 1/2 cup kale stems, sliced into strips
– 1/2 block firm tofu, about 6 oz, cut into cubes
– 1 tsp black pepper
– 1 fresh lime. Squeeze juice of 1/2 lime to use while cooking. Cut remainder into wedges.
– 7 oz dry rice noodles, fettuccine or wider. I look for simply-made pasta: rice and water
– 2 tbsp red miso
– 2-3 tbsp olive oil
– 2-3 tsp arrowroot powder
– 2-3 tsp soy sauce

-Preparation-
Place pot of water on high heat. When water boils, add pasta.
Turn heat down to med high, enough to just keep it boiling
To a hot wok or pan, add olive oil. When oil is hot, add crushed garlic and onion.
Turn heat down to medium.
After a minute or two, add sweet pepper and mushrooms.
Keep ingredients moving in wok, turning with spatula.
Add kale stems and cabbage.
And add kale. When kale wilts, remove wok from heat and pour mixture into a bowl.
When pasta softens, but is still firm, remove from heat, strain, rinse under cold water, and set on plate.
Add 1/2 tsp oil to wok on med high. When hot, add tofu and turn down to medium.
Add dash or two soy sauce, pinch black pepper.
When tofu browns to your liking, remove from heat, turn out into plate or bowl.
To wok on med, add 2 tbsp oil, add cooked pasta. Separate noodles with spatula.
Add dash or two of soy sauce.
When noodles are brown, crisp and firm, still soft in the middle, remove from heat to a plate.
Using a teaspoon, stir arrowroot into 1/2 cup water.
Add vegetables, soy sauce and miso.
Add lime juice.
Add arrowroot to pot of hot stock.
-Serve-
Spoon vegetables and gravy over noodles. Add tofu.
Enhance with lime and chili paste.
Serves two or three.
